I’m so excited to get this recipe to you as I am literally addicted to these bars! Not only can they be  prepped in under 5 minutes, but also, they require no baking. They are also gluten-free, refined sugar-free, dairy-free, and vegan if you like!

So I made these a few weeks back while watching the Hart of Dixie. I’m really not a TV series kind of girl, but I am so obsessed with this show. It’s about a young doctor who can’t get a job in NYC, so she moves to a tiny town in the middle of nowhere in Alabama. Its so charming and at times hilarious, but mostly, I just love that it’s light hearted.

Long story short, I ended up watching all 4 seasons, and eating 3 batches of raw’nola bars, in less than 3 weeks 🙈! Sometimes a girl just has to have her moments, right?! LOL

The best thing about these bars, they are totally guilt free. I’ve been eating them in the morning when I don’t have time to make oatmeal. If you think about it, they are literally everything  you would put into a good bowl of porridge. If you don’t like chocolate chips, you can sub anything you like. This isn’t science!!! Experiment and have fun!

Just a few tips:

1) Keep in the refrigerator until ready to eat. These won’t go bad at room temperature, but they will crumble into granola. However, they are perfect bars otherwise.

2) Get creative! Im a chocolate addict, but try swapping items like raisins or goji berries if you prefer.

3) I doubt these will even be around after 3 days, but I find they are best if eaten within 4-5 days of making.

Step 1:

Combine the below ingredients in a bowl. If your ingredients are not at room temperature, you will need to wait (if going for raw) or warm over low heat until just combined. Remove from heat and let sit 3 minutes:

  • 1/4 Cup Coconut Oil
  • 1/4 Cup Raw Almond Butter
  • 1/4 Cup Raw Honey

Step 2:

Stir the below into the above mixture. Transfer into a 6×8 glass baking dish that is lined with parchment paper:

  • 1 1/4 Cup Gluten-Free Oats
  • 1/4 Cup Unsweetened Coconut
  • 2 Tbsp Pepitas
  • 2 Tbsp Hemp Seeds
  • 2 Tbsp Chocolate Chips (I prefer Mini/Use your favorite brand)

Step 3:

Press oat mixture firmly into the dish and sprinkle with the topping (1 Tbsp Pepitas, 1 Tbsp Hemp Seeds, 1 Tbsp Chocolate Chips). Let sit in the fridge to firm up for at least 2 hours (I prefer to let sit overnight). Cut into bars and store in air tight container in the fridge until ready to eat.

Warning: If you don’t keep these refrigerated, they will crumble.
